100g or 1/3 cup caster sugar
75g or 1/3 cup brown sugar
125g soft unsalted butter
1 egg
140g or 1 ¼ cup plain flour
½ teaspoon baking powder
½ salt
75g or 1 cup oats
140g chocolate (chips or a block chopped up)
METHOD
Preheat oven to 180c
Using a stand mixer or beaters and a bowl, beat butter and sugars until creamy.
Add egg and mix till combined.
Add flour, baking powder and salt and mix till combined.
Add oats and mix till evenly distributed in the dough.
Add chocolate and mix till evenly distributed in the dough.
Put in the fridge for 10-15 minutes.
Line trays with baking paper.
Roll a heaped tablespoon of the dough into a ball.
Place on the tray and leave space between for spreading. I normally put 6 biscuits to a standard baking tray.
Cook for 15 minutes or until slightly golden.
Leave to cool for a bit. They do taste extra delicious when they are still a little warm.
